We’re still basking in fall-like weather this week, so I’m declaring it Soup Season. Being from Texas, I’ve always had a weakness for tortilla soup. It’s comforting like chicken noodle soup, but with a Tex-Mex twist.
My Slow Cooker Tortilla Soup is a new favorite at our house. I’m going to boldly proclaim that it’s even better than the one from my favorite go-to-on-a-weekly-basis Tex-Mex restaurant.I really could eat this every day. It’s filling, but still light–definitely a meal on its own or paired with a fresh salad. Not only is it tasty, but it’s also healthy–full of lean protein and veggies. You can go crazy and add calories with the toppings, but even then, you’re in probably in pretty good shape.
And, let’s just talk about toppings for a moment. First up- you can’t have tortilla soup without tortillas. While you can certainly crush up your favorite bagged corn tortilla chips, you can also make your own with just a little effort and about 10 minutes. They’re so worth it.
Avocado makes everything better. If you disagree with me, I’m not sure we can be friends. Just kidding…sort of. Shredded cheese is also a must-have. I like monterrey jack or pepper jack, which get melty and gooey and are just divine.
I also like a squeeze of lime in my soup, and my mister likes things spicy, so fresh jalapeños or a little Tabasco (or Green Dragon hot sauce from Trader Joe’s) are a must for him.Any way you top it, this slow cooker tortilla soup is sure to make your day better. My slow cooker is getting a ton of use these days, given that we are at soccer/football/lacrosse almost every night. It is such a life-saver to be able to throw everything in that baby and know that my house will smell incredible and my people will be fed with little effort on my part.
If you don’t have a slow cooker or simply prefer a stove-top version, I’ve included those instructions for you, as well. Don’t worry, it’s still easy and just as delicious.This soup is also naturally gluten-free, and if you’re vegetarian or vegan, simply omit the chicken and substitute vegetable broth for chicken broth. Either way, it’s a winner.
